Cheesy Turkey Quesadilla
Ingredients
Makes: 4 servings

  • 2 tablespoons vegetable oil
  • 4 MANNY'S® large tortilla shells
  • 1 cup refried beans
  • 1 teaspoon chili powder
  • 3/4 pound JENNIE-O TURKEY STORE® Premium Deli Breast from the service deli
  • 1 large tomato, chopped
  • 4 scallions, sliced
  • 4 ounces cheddar cheese, shredded
  • salsa and sour cream, if desired

Directions
Heat griddle or large skillet to 375°F. Lightly brush vegetable oil on 1 side of each tortilla shell. Turn 2 tortillas over, oil side down, and evenly divide half of the refried beans and chili powder. Place 1 tortilla with beans, oil side down on hot griddle and top with turkey, tomato, scallions, and cheddar cheese. Place second single tortilla, oil side up, onto turkey mixture. Cook until bottom is lightly browned; turn quesadilla over. Cook second side until quesadilla is browned and turkey mixture is thoroughly heated. Repeat with remaining 2 tortillas and ingredients. Cut each quesadilla into fourths and serve with salsa and sour cream, if desired.

Turkey Caesar Wraps
Makes: 4 servings

Total time: More than 1 Hour

Ingredients

  • 4 tablespoon creamy ceasar dressing
  • 4 MANNY'S® large tortillas
  • 12 leaves romaine lettuce
  • 12 ounces JENNIE-O TURKEY STORE® Oven Roasted Turkey Breast from the service deli, sliced
  • 1 (7 ounce) jar roasted red peppers, drained and chopped
  • 1/2 cup parmesan cheese, grated

Directions
Spread dressing over one side of each tortillas. Place lettuce, turkey breast, red peppers, and parmesan cheese on tortillas. Tightly roll up to secure filling.
